BACK DOWN MEMORY LANE…
As I was preparing holiday dinner, I went back to my Granny days and remembered as she told her story of preparing meals for the family. It was back in the 30’s that my grandma and grandpa moved to Louisiana, by way of North Carolina and through Mississippi. My grandpa went to college to become a farmer. He raised everything to eat with the help of granny and his two boys!
A mighty kitchen was born at this point! From that kitchen flows some great receipes and this is one i wanted to share:
“HOT WATER CORNBREAD RECIPE”
2 Cups of Yellow Cornmeal
1/2 Cup of Self-rising Flour
1 Teaspoon of Salt
2 Tablespoons Vegetable Oil
1 Tablespoon Chop Jalapenos (optional)
1 Cup of HOT Boiling Water
In a medium bowl, Mix together the cornmeal, salt and oil. Stir in enough boiling water so that the cornmeal mixture comes together enough to spoon. Spoon hot cornmeal mixture in your hands that have been dipped in cold water. Then gently roll the cornmeal into and place them on top of your fresh cooked greens or beans to steam the cornbread. The seasoning from the greens or beans makes it soooo good!
