Have you ever been so rejoiceful about something that has happened in your life?  Well let’s discuss rejoicing.   I woke up this morning and all was well.  I was feeling blessed, so I decided to write this little message of joy.  You see mama always taught us as children to be grateful for the things that others do for you.  To all of my children mama says thanks!

Now let’s have a little fun with another one of my recipes.  I remember this one from Granny because she would wrap them in a white cloth and put them into a basket on the dining room table.  As children we had to wait until she gave us one!  Just what was the goodness waiting for the children you ask?

– 3 Cups of All Purpose Flour plus more for rolling

– One Teaspoon Baking Powder

– Two Cups of Sugar

– Two Eggs

– One Half Cup of Buttermilk

– One Half Pound or 2- Sticks of Butter, softened

– One Teaspoon of Vanilla Extract

– One Half Cup of Dried Fruit (Optional)

Preheat oven to 350 degrees F.

In a large bowl, sift flour and baking powder together.  Add remaining ingredients and blend well.  The dough will be soft and wet.  On a floured surface, shape the dough into a dish and cover with plastic wrap.  Then place it in the refrigerator for one hour.  Flour surface again and roll dough out until approximately 3/4 thick.  Cut dough into desired shapes and bake on a slightly greased sheet pan for 10 – 12 minutes.  Ummmm Good!

Now get yourself a cold glass of milk or a bowl of ice cream and REJOICE!
